I usually do rice milk because it is also suitable for guests who cannot eat nuts. No vegetable milk at home? Then you just use water. I always have blue berries in the freezer. I usually get them out of the freezer the night before and let them thaw during the night in the fridge. Just before serving I warm them up. Usually in the microwave, but for those who do not want in a saucepan on the fire. The coconut yogurt that I use is AH creamy coconut natural. This has the freshness of yogurt and the creamy of whipped cream. With this, they are just not good enough in terms of taste. So for these delicious pancakes i sin with white flour. I’ll compensate for that again a bit with the hefty tablespoon of flaxseed. It contributes not only to the texture (instead of egg) but also gives good fats and fibers. Ideal for vegetarians and vegans, but also very delicious if you are not:-)
